TRUE CASSIA VS FOREST CASSIA

If you are truly wondering why there is so much difference in price of Cassia Cinnamon between suppliers in Vietnam, even they claim to have the same quality, this article is for you.

Forest Cassia, a specie that looking so much Cassia Cinnamon but not Cassia Cinnamon. Being harvested in the Forest, which is protected by the law and government. Mixing in all kinds of Cassia Cinnamon (from broken to split or even stick cassia) to reduce the price. Mixing these Fake Cassia and True Cassia, intentional or unintentional, this will definitely result in a bad habit, which will be harmful for our reputation and gradually damage the experience of our end users.

So let’s have a quick check on the differences between these two.

Cork (Skin) Color: Same

Without Cork Color: They look pretty identical to each other.

The below picture is featuring both Forest Cassia and True Cassia. Can you pick them out?

Oil Line:

Forest Cassia’s Oil Line is deep dark.

True Cassia’s Oil Line is lighter in color. When newly cut, the Oil Line look amazing as they cover all over the cut part.

Over the process of drying and storing, the Volatile Oil, which is exposed to the air, will gradually evaporate. That made the oil line on the two end of True Cassia disappear.


We can make them appear again by breaking them in half or peel the two end, which will result in the below picture.


When comparing the oil line in this state, those of Forest Cassia are much darker than those of True Cassia. They form a very thick but dark oil line when comparing to True Cassia. Since Forest Cassia contains fixed oil, which will not be easily evaporate under normal condition, their oil lines will stay as they are over time.
By using the Oil Line, you can easily separate the True Cassia and Forest Cassia on the above second picture.


However, there is also time when the thickness is too thin, which make you couldn’t figure out the difference in the oil line. As on the below picture:


These last two points would be your best allies.

Smell
Forest Cassia: definitely not a smell of Cassia Cinnamon. Since there is fixed oil inside, they have their own scent. (Since I couldn’t think of any scent from other species to make a connection, I will leave this here for now). For a person, who have already used Cassia Cinnamon, you will surely be able to distingue them.

Taste
If Cassia Cinnamon triggers the sweet and spicy sensation, Forest Cassia prompts none of those. The correct description for their taste would be: woody, so much wood like that you could find everywhere in your office.
