Cassia powder color, will you able to tell anything from the color of your cassia cinnamon powder?

Yes, you will. But not too much.

For example, taking out these samples:

You got VO 1.5% is the darkest powder, also less yellowish and more grayish. VO 2.5% and 3% are brighter and more yellow in side. However, the VO 4% cassia powder is a bit darker compare to 2.5% and 3%.
So the theory that said “the brighter the color is, the higher the VO is”, is not correct this time.

Then, what should be the case?

For cassia powder making, the color is highly depended on the available of materials at the time of processing. As well as the way they are mixed. And the requirements of customer in order to optimize the cost and price.

Cork (Skin)
This is the outer layer of cassia bark.
You may also see them in Broken, Split and other Cassia products:
If your materials get more cork, your powder would be darker.

Leaves
The leaves of cassia cinnamon content around 2% of Volatile Oil, it is great source of material for powder with VO=1-3%.
As the leaves will turn light brown/yellow when they are dried, your powder will be much brighter with the available of these leaves.

Cassia Stick (Broken)
This is a great source of high quality and high oil content cassia powder.
Since there is only a bit to no cork in these cassia stick, the color of your powder will be much brighter and more yellowish. In addition to the brighter color, the high Volatile Oil content, the characteristics of taste and sweet in these cigar stick also play an important role in producing top quality powder.

Bonus Round: Make a cheaper, yet high quality (or meet your standard) cassia cinnamon powder.

Since this is a bonus on how to make a cheaper, yet high quality cassia powder, the things that you have to do is:
1. Decide how much VO and the color you would like your cassia powder to have?
2. Figure out the VO content and the price of each cassia material.
3. Find a way to grind and mix so that your final product meets your requirements (price, taste, color, etc.)
Note: there is also case when you couldn’t meet the requirement on taste/smell/price. For example, for VO 1% cassia powder, you can’t request a yellowish, spicy and sweet item. That’s overkill. Unless you want to pay extra to make higher quality.
